Sauce

3 tbsp smooth peanut butter

2 tbsp soy sauce

1 tbsp rice vinegar or lime juice

1 tbsp maple syrup

1 tbsp sriracha or chilli garlic sauce

1 tsp toasted sesame oil

1 garlic clove, grated

1 tsp fresh ginger, grated

3–4 tbsp hot water

Noodles

200 g noodles (udon, ramen, rice or even spaghetti)

1 carrot, cut into matchsticks

½ cucumber, cut into matchsticks

1 red pepper, thinly sliced

100 g edamame beans (frozen, cooked)

3 spring onions, sliced

2 tbsp roasted peanuts, chopped

Sesame seeds, coriander and lime wedges, to serve

Method

Cook the noodles according to the packet. Drain and rinse briefly under cold water so they don't stick.
Whisk the sauce ingredients together, adding hot water a spoon at a time until it's the consistency of double cream.
Toss the noodles with the sauce, carrot, cucumber, pepper and edamame.
Top with spring onions, peanuts, sesame seeds and coriander. Serve with lime wedges.

💡 VeggieTip notes

Add crispy tofu (see our crispy baked tofu recipe) for extra protein.
Great cold from the fridge for lunch the next day — keep the veg separate if packing ahead.
Gluten-free: use rice noodles and tamari.
