Soft cinnamon apples under a crunchy buttery oat crumble. Easy, cheap, and the definition of comfort — vegan option included.

Method

  1. Heat the oven to 190°C (170°C fan). Toss the apples with the sugar, cinnamon, lemon juice and flour and tip into a baking dish (about 20 x 30 cm).
  2. For the crumble, mix the flour, oats, sugar and salt. Rub in the butter with your fingertips until it looks like coarse breadcrumbs with some larger clumps. Stir in the nuts.
  3. Scatter the crumble evenly over the apples — don't press it down.
  4. Bake for 35–40 minutes until golden and the fruit is bubbling at the edges. Rest for 10 minutes.
  5. Serve warm with custard, ice cream or cream.

  • Swap in pears, plums, rhubarb or berries — adjust the sugar to taste.
  • Make the crumble topping in bulk and freeze; sprinkle straight from frozen.
  • For extra crunch, toast the topping on a tray for 10 minutes before using.
