Method

  1. Fry tofu with tamari until golden; cool.
  2. Whisk peanut butter, lime, maple and enough warm water for dipping sauce.
  3. Dip one wrapper briefly in warm water and lay flat.
  4. Add noodles, vegetables, herbs and tofu; fold sides inward and roll firmly.
  5. Repeat and serve immediately with sauce.
