Sticky peanut tempeh tucked into crisp lettuce with herbs and lime. Built around everyday ingredients and a clear method, this vegetarian recipe delivers strong flavour without unnecessary complication.

Method

  1. Fry tempeh in oil for 7 minutes until browned.
  2. Whisk peanut butter, tamari, lime, maple, sriracha and 3 tbsp water.
  3. Pour sauce over tempeh and cook until glossy.
  4. Fill lettuce leaves with carrot, pepper and tempeh.
  5. Finish with coriander and extra lime.

  • Warm the lettuce leaves briefly if raw lettuce is hard to digest.
  • The filling is also excellent over rice.
