Intensely chocolatey, fudgy brownies with a secret tin of black beans. Gluten-free, high in fibre, and nobody will guess.

Method

  1. Heat the oven to 180°C (160°C fan) and line a 20 cm square tin with baking paper.
  2. Blend the beans, eggs, oil, cocoa, sugar, vanilla, baking powder, salt and coffee in a food processor for 2 minutes until completely smooth — scrape the sides halfway.
  3. Stir in two-thirds of the chocolate chips. Pour into the tin and smooth the top. Scatter over the remaining chips.
  4. Bake for 22–26 minutes until the edges are set and the centre has a slight wobble. Do not over-bake — they firm up as they cool.
  5. Cool completely in the tin (this is important), sprinkle with flaky salt, then cut into 12 squares.

💡 VeggieTip notes

  • They're even better chilled overnight — properly fudgy.
  • Add a swirl of peanut butter on top before baking.
  • Vegan: replace eggs with 3 flax eggs; the texture is denser but still delicious.
