Method
- Heat oven to 200°C (180°C fan). Lay pastry on a lined tray.
- Spread mustard, leaving a 4 cm border; layer beetroot and goat cheese.
- Drizzle with honey and add thyme and walnuts.
- Fold border inward, brush with egg and bake 35–40 minutes.
- Rest briefly and serve with rocket.
