Method
- Heat the oven to 200°C (180°C fan). Put the tomatoes, pepper, onion and garlic on a large roasting tray. Drizzle with oil, sprinkle with sugar, oregano, salt and pepper and toss. Roast for 35–40 minutes until soft and lightly charred at the edges.
- Squeeze the roasted garlic out of its skins into a blender (or large pan if using a stick blender). Add everything else from the tray, including the juices.
- Add the stock, balsamic and basil and blend until completely smooth. For an extra-silky soup, pass through a sieve.
- Pour into a pan and warm through. Taste — add more salt, a pinch of sugar if it's sharp, or a splash more stock if it's thick.
- Serve with a swirl of cream or olive oil, torn basil and black pepper.
💡 VeggieTip notes
- In winter, use two 400 g tins of whole plum tomatoes roasted on the tray with the same veg — it still works brilliantly.
- Freezes for 3 months. Great as a pasta sauce too.
- The obvious partner: a grilled cheese sandwich for dunking.
