Crispy Baked Tofu Stir-Fry with Sticky Sesame Sauce

Finally, tofu that's actually crispy — baked with cornflour, then tossed through crunchy veg and a sweet-savoury sesame sauce.

If you've ever been disappointed by soggy tofu, this recipe will change your mind. The trick is pressing it well, coating it in cornflour and baking it hot until it turns golden and crunchy. Then it goes into a quick stir-fry with a sauce that clings to everything.

Method

  1. Heat the oven to 220°C (200°C fan). Toss the tofu cubes with the soy sauce, then sprinkle over the cornflour and toss until evenly coated. Drizzle with oil, spread on a lined baking tray and bake for 25–30 minutes, turning halfway, until golden and crisp.
  2. Whisk all the sauce ingredients together in a small bowl and set aside.
  3. When the tofu has 8 minutes left, heat the oil in a large wok or frying pan over high heat. Add the pepper, broccoli and carrot and stir-fry for 4–5 minutes until just tender but still crunchy.
  4. Pour in the sauce and stir for 1 minute until it bubbles and thickens.
  5. Add the crispy tofu and most of the spring onions, toss to coat, then serve over rice, scattered with sesame seeds and the remaining spring onions.

💡 VeggieTip notes

  • Pressing the tofu is the one step you can't skip — wrap it in a clean tea towel and put a heavy pan on top.
  • Gluten-free: use tamari instead of soy sauce.
  • Swap the veg for whatever needs using up: mangetout, mushrooms, pak choi and baby corn all work.
