Roasted Sweet Potato & Black Bean Tacos

Caramelised sweet potato, spiced black beans, quick pickled onions and lime crema. Taco night, no meat required.

Method

  1. Heat the oven to 220°C (200°C fan). Toss the sweet potato with oil, cumin, paprika, chilli powder, salt and pepper and roast for 20–25 minutes until caramelised at the edges. Add the black beans for the last 5 minutes to warm through.
  2. Meanwhile, mix the onion with the lime juice, sugar and salt and leave to pickle — it turns bright pink in 15 minutes.
  3. Stir the crema ingredients together.
  4. Warm the tortillas in a dry pan or wrapped in foil in the oven. Fill with sweet potato and beans, top with pickled onions, avocado, crema, coriander, feta and hot sauce.

💡 VeggieTip notes

  • Char the tortillas directly over a gas flame for 10 seconds per side for smoky flavour.
  • The pickled onions keep a week in the fridge — make extra, they're great on everything.
  • Add sweetcorn or shredded red cabbage for crunch.
