225 g block halloumi, cut into 1 cm slices

2 mixed peppers, cut into chunks

1 courgette, sliced into thick rounds

1 red onion, cut into wedges

200 g cherry tomatoes

1 x 400 g tin chickpeas, drained

3 tbsp olive oil

1 tsp dried oregano

1 tsp smoked paprika

2 tbsp honey

1 lemon, juice and zest

½ tsp chilli flakes

Salt and black pepper

Fresh mint or parsley and couscous, to serve

Method

Heat the oven to 220°C (200°C fan). Toss the peppers, courgette, onion, tomatoes and chickpeas with 2 tbsp of the oil, the oregano, paprika, salt and pepper on a large baking tray. Roast for 20 minutes.
Mix the honey, lemon juice and zest, chilli flakes and remaining 1 tbsp oil in a small bowl.
Take the tray out, nestle the halloumi slices among the veg and drizzle the honey mixture over everything. Return to the oven for 10 minutes until the halloumi is golden and the edges are sticky.
Scatter with fresh herbs and serve with couscous, spooning the tray juices over the top.

💡 VeggieTip notes

Halloumi goes rubbery when it cools — serve straight from the oven.
Swap the veg for whatever's in the fridge: aubergine, broccoli and sweet potato all roast beautifully.
Use maple syrup instead of honey if you prefer.
