How to Cook Perfect Rice, Quinoa and Lentils Every Time

The exact ratios and timings for fluffy rice, fluffy quinoa and lentils that hold their shape — no more mush, no more crunch.

These three ingredients show up constantly in vegetarian cooking, and getting them right makes every recipe that uses them better.

White rice (the absorption method)

Ratio: 1 part rice to 1.5 parts water. Rinse the rice under cold water until it runs clear (this removes excess starch and prevents gumminess). Add rice, water and a pinch of salt to a pan, bring to the boil, then cover tightly and reduce to the lowest heat for 12 minutes. Turn off the heat and let it sit, covered and undisturbed, for 10 minutes. Fluff with a fork.

Quinoa

Ratio: 1 part quinoa to 2 parts water. Rinse well first (quinoa has a natural bitter coating called saponin). Simmer covered for 12–15 minutes until the water is absorbed and you can see the little white 'tails' curl out of each grain. Let it stand off the heat for 5 minutes, then fluff.

Red split lentils (for dal, soups)

No soaking needed. Ratio: roughly 1 part lentils to 3 parts water or stock. Rinse, then simmer uncovered for 15–20 minutes, stirring occasionally, until completely soft and broken down — this is what you want for a creamy dal.

Green or brown lentils (for salads, where you want shape)

No soaking needed. Ratio: 1 part lentils to 3 parts water. Simmer for 20–25 minutes until tender but still holding their shape — check from 18 minutes onwards so they don't turn to mush. Drain any excess water.

Why is my rice always mushy or stuck together?

Almost always too much water, or not rinsing the starch off first. Stick to a 1:1.5 rice-to-water ratio and rinse until the water runs clear.

Do lentils need soaking?

Split red, green and brown lentils don't need soaking and cook in 15–25 minutes. Whole dried chickpeas and kidney beans do need soaking (and in the case of dried kidney beans, a hard boil for safety).
