Spinach Fetta Pastries


1 package of baby Spinach chopped
1 yellow onion chopped finely
1 carrot chopped finely
1 small Zucchini chopped finely
1 garlic chopped finely
Tablespoon olive oil

Fry above vegetables until done

Roll out Puff Pastry on (its) paper
Cut in 6 equal pieces
Drop tablespoon of vegetables on each square
Add finely chopped feta
Close pastry squares any way you like. Roll or bring corners together.  As long as the vegetable pocket is closed well.
Brush pockets with a beaten egg for a nice shine.

Bake at 220 for about 20 minutes

Optional:  For added flavor, add 1/2 teaspoon of salt; 1/2 teaspoon of hot pepper flakes; and 1/2 cup of grated parmasan cheese to Veg. Mix .
