Quinoa Salad
A refreshing and nutritious quinoa salad packed with vegetables.
Ingredients:
- 1 cup quinoa
- 1 ½ cups water
- 1 cucumber, diced
- 1 red bell pepper, diced
- 1 yellow bell pepper, diced
- 1 small red onion, finely chopped
- Juice of 1 lemon
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions:
- Rinse the quinoa thoroughly under cold water.
- In a medium saucepan, bring the water to a boil. Add the quinoa, reduce heat, cover, and simmer for 15-20 minutes or until the water is absorbed and the quinoa is tender. Fluff with a fork and let cool.
- In a large bowl, combine the cooked quinoa, diced cucumber, diced red bell pepper, diced yellow bell pepper, and chopped red onion.
- In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper. Pour the dressing over the quinoa mixture and toss to combine.
- Refrigerate the quinoa salad for at least 1 hour to allow the flavors to meld. Serve chilled.
